Cream of Black Beans


INGREDIENTS

A quick, healthy, and yummy soup with just 61.5 calories and .25 g fat per serving.

2 cups water, divided
1/2 cube concentrated chicken broth
1/2 green pepper, finely chopped
1 small onion, finely chopped
1/4 tsp. powdered cumin
1/2 tsp. powdered oregano
1 bay leaf
2 cans unseasoned black bean purée
1 tbsp. balsamic vinegar
1 tsp. sugar

PREPARATION

In pot bring 1 cup of the water to boil and dissolve chicken-broth cube. Add green pepper, onion, cumin, oregano, and bay leaf. When onion softens, add another cup of water. Add black beans and mix well. Cover and cook over low heat 20 minutes. Add vinegar and sugar. Cover and cook 5 more minutes. Serve immediately. Makes 4 servings.
