Healthy arroz con camarones (Rice and shrimp)

INGREDIENTS

1 tbsp. olive oil
3 garlic cloves, finely chopped
1 medium onion, finely chopped
1 small green bell paper, finely chopped
1 small red bell pepper, finely chopped
1 lb. medium shrimp, peeled and deveined
3 cups reduced-fat chicken broth
1 cup canned diced tomatoes
1 1/2 cup brown rice
1 tsp ground achiote chile powder
2/3 cup frozen green peas
1/2 tsp. kosher salt
1/4 tsp. freshly ground pepper

PREPARATION

In 3-quart covered casserole or nonstick Dutch oven, heat olive oil over medium heat. Add garlic, onion and peppers, and cook until onion is translucent. Add shrimp and cook 2-3 minutes, until shrimp turn pink. Using tongs or fork, remove shrimp from pan and set aside on rimmed platter. Add broth, tomatoes, rice and chile powder to pan. Bring to boil, reduce heat, cover and simmer until rice is fully cooked, about 15 to 20 minutes. Stir in shrimp and peas and cook 3 more minutes. Season with salt and black pepper and serve hot. Makes 4 to 6 servings.

There are a few things you must do to have a successful business. Below I’ve listed the top ten:

1. Quality
- You must be able to provide a quality product/service which people want and need.

2. Customer loyalty/service
- You must help your customers feel that they can trust you. Be honest and trustworthy. Offer money back guarantees and stick to your policies. Treat your customers like gold.

3. Offer something for free once in awhile
- Your customers don’t really care how great your company is or how wonderful you are for that matter. Their only concern is how your product can help them! How will it meet their needs; improve their lives; make them happier; etc. Offer something of value and they will buy what you’re selling.

4. Creative/unique

INGREDIENTS

For the cake:
1 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
5 eggs, separated
3/4 cup sugar

For the syrup:
1 cup water
1 1/2 cups sugar
2 cinnamon sticks, each broken in half
1 tablespoon lemon juice
2 pieces lemon peel (2- to 3-inch-long strips)
3/4 cup raisins
3/4 cup pitted prunes, coarsely chopped
1/3 cup rum, light or dark
1/3 cup sherry, dry or sweet


PREPARATION

Combine the flour, baking powder, and salt and set aside. Add the egg yolks and sugar to a bowl and beat well, until creamy. Using a wire whisk or electric hand mixer, beat the egg whites in a separate bowl until the whites have stiffened and formed peaks. Gently fold the beaten egg whites into the yolk mixture, and then fold into the flour mixture, stirring only enough to wet the dry ingredients.

Pour batter into a lightly greased 8- or 9-inch square baking dish, and bake in a preheated 350°F oven for 18 to 20 minutes, until a toothpick or knife tip inserted into the center of the cake comes out clean.…

Mango batido!

INGREDIENTS

3 cups milk
1/2 tsp. vanilla extract
2 scoops (about 1/2 cup) vanilla ice cream
1 mango, peeled and pitted
1 banana, peeled
1 cup crushed ice
1/2 cup whipped cream (optional)
4 cherries (optional)
4 mint sprigs (optional)

PREPARATION

Combine milk, vanilla extract, vanilla ice cream, mango, banana, and ice in blender and purée until smooth. Top each serving with whipped cream, a cherry, and a mint sprig, if desired. Makes 4 to 5 servings.

Pastel de Tres Leches!

INGREDIENTS

For cake:
2 cups all-purpose flour
1 1/2 tsp. baking powder
9 eggs, separated
1 tsp. cream of tartar
1 1/2 cups white sugar
3/4 cup butter, softened
1 tsp. vanilla extract
1 cup whole milk

For milk syrup:
1 cup sweetened condensed milk
1 cup evaporated milk
1 cup heavy cream
1 tbsp. light rum

For frosting:
6 egg whites
Pinch of salt
1/4 tsp. cream of tartar
3/4 cup water
1 1/2 cups sugar

Preheat oven to 350°F. Sift together flour and baking powder. Separate egg yolks from whites. In mixing bowl beat egg whites and cream of tartar until stiff peaks form. Set aside. In another bowl, cream sugar and butter with an electric mixer. Add yolks and vanilla extract. Beat until foamy. Continue mixing, slowly adding flour mixture and whole milk until batter is smooth. Gently fold in beaten egg whites with spatula. Pour batter into lightly buttered 9-by-13-inch baking dish. Bake 25 to 30 minutes or until toothpick inserted into center comes out clean. Tomato stuffed with guacamole!

INGREDIENTS

12 small (2- to 2 1/2-inch) tomatoes (not plum tomatoes)
1 tablespoon olive oil
1 tablespoon fresh lime juice
3 firm-ripe California avocados
2 tablespoons finely chopped onion
1/2 teaspoon finely chopped fresh cilantro
2 teaspoons minced fresh jalapeno chile, including seeds
1/2 teaspoon salt
Accompaniment: shredded iceberg lettuce
Garnish: fresh cilantro sprigs

PREPARATION

Cut a thin slice from stem end of each tomato and scoop out and discard seeds with a small spoon. Carefully scoop out pulp to form a tomato shell, then finely chop pulp.

Drizzle inside of each tomato shell with oil and lime juice and let stand at room temperature while making guacamole.

Pit and peel avocados and coarsely mash with a fork in a bowl. Fold in chopped tomato pulp, onion, cilantro, chile, and salt, then spoon into tomato shells, mounding guacamole. Serve immediately. Makes 4 to 6 servings.
