Tropical Heat Burgers!


1 pound lean ground beef
1/2 cup red onion, finely minced
2 serrano chiles, stemmed, seeded, and finely minced
1/2 teaspoon salt
1/2 teaspoon crushed chile de árbol
Barbecue Sauce
4 pineapple rings
4 sourdough bread rolls
1 cup shredded lettuce


Combine beef, onion, serrano chiles, salt, and chile de árbol in a mixing bowl. With hands, mix and form into four patties. Grill to desired doneness. During the last few minutes of cooking, brush with the barbecue sauce. While burgers are cooking, grill pineapple rings. Wrap bread rolls in foil and warm on the grill. To assemble, place burger over lettuce in a roll, top with extra barbecue sauce and a pineapple ring.
