Rice and Pigeon Peas!


This is a popular Christmas dish in Puerto Rico, but it's also enjoyed year-round. This recipe combines vegetables and some grain proteins.


* 1/2 pound fresh pork or bacon, diced (optional)
* 6-ounce jar of sofrito
* 1/4 cup tomato sauce
* 1 1/2 cups rice
* 1 packet Sazón
* 16-ounce can of pigeon peas
* 2 1/2 cups water
* 1 teaspoon salt


In a heavy pot, sauté fresh pork and bacon. Add sofrito, tomato sauce, rice, and Sazón. Mix well. Add pigeon peas, water, and salt. Cook uncovered until it begins to boil. Cover and simmer 30 minutes.
